- 4 potatoes, peeled and cubed
- 1 broccoli, cut into florets

Instructions:
1. Prep the vegetables:
- Peel and cube the potatoes into bite-sized pieces.
- Cut the broccoli and cauliflower into florets.
- Peel and slice the carrot into rounds or half-moons.
- Chop the onion into small pieces.
2. Roast the potatoes, broccoli, and cauliflower:
- Preheat your oven to 400°F (200°C).
- On a baking sheet, toss the potatoes, broccoli, and cauliflower with 1 teaspoon salt and a drizzle of olive oil.
- Roast the veggies in the preheated oven for 25–30 minutes, or until the potatoes are fork-tender and the broccoli and cauliflower are slightly crispy on the edges.
3. Sauté the carrots and onion:
- While the vegetables are roasting, heat a tablespoon of olive oil in a skillet over medium heat.
- Add the chopped onion and carrot slices to the pan. Cook, stirring occasionally, until the onions become translucent and the carrots are slightly softened (about 8–10 minutes).
4. Combine and season:
- Once the roasted vegetables are done, remove them from the oven and transfer them to a large baking dish.
- Add the sautéed carrots and onions to the mix.
- Sprinkle the remaining 1 teaspoon of salt over the casserole, and toss everything to combine evenly.
5. Optional: Bake for extra flavor:
- If you like a more unified, baked dish, you can return the casserole to the oven and bake for an additional 10–15 minutes until everything is hot and a little crispy on top.
6. Serve and enjoy:
- Serve the casserole hot as a hearty side dish or as a main course with a protein of your choice.
